Ranch Spaghetti

Dee-lic-ious!  I told William I would fight him for the leftovers for lunch.  Really.  Picky Palate is one of my favorite recipe blogs, because she puts a little swing in her step when she creates in the kitchen.  I got the recipe from her here.  She calls it
BBQ Shredded Chicken and Caramelized Red Onion Ranch Spaghetti.  It's just Ranch Spaghetti for me...all I know is that the recipe is a keeper. 

Here we go:  Chop the cilantro
and the red onion.


Then brown them in a bit of olive oil.



Make sure the chicken has been sunbathing in that yummy barbecue sauce she told you about.



Then put it all together with a little bit of parmesan on top, and garlic bread on the side.  Don't let anybody get too close to your plate.  You might bite them.

BBQ Shredded Chicken and Caramelized Red Onion Ranch Spaghetti

1 lb thin spaghetti noodles
4 Tablespoons extra virgin olive oil
1/2 large red onion, peeled and finely chopped
2 Tablespoons dry Ranch Dressing Mix
3/4 Cup chopped fresh cilantro leaves

1. Cook spaghetti noodles according to package directions; drain and rinse with cold water to stop cooking. Place olive oil into a large pot over medium heat. Saute red onions until softened and golden. Add cooked spaghetti to onions; mix and add dry Ranch Dressing seasoning and cilantro leaves. Season with a pinch of salt and pepper to taste. Place noodles onto serving plates and top with warm shredded BBQ chicken. Garnish with cilantro leaf and serve.
