Healthy living...

My sweet friend, Cassie, got this recipe for Spinach, Tomato, and Feta Quiche from Katy, and shared it on her blog.  I made it tonight with a few modifications for less calories, and it was awesome to be able to eat almost half of the pie plate for a measly 380 calories.  Yum-my!  I changed two things:

*used Phyllo dough (three sheets) instead of puff pastry
*used 1% milk instead of heavy cream

Oh, my goodness, dears...make it for dinner.  You won't regret it!
